I just discovered something that many of you who work more regularly with RHEL/CentOS may already be aware of...
The non-graphical installer for 6.x doesn't allow for custom disk partitioning!!!!  It also doesn't seem to allow for package selection, network config, etc..  If you aren't using the graphical installer, the only options presented are to use the "whole disk" or "free space"

That makes installing on XenServer a pain in the buttocks.  Maybe it is better in 7.x...
