I've been using the Arduino family for a couple of years now and I see 
no reason you couldn't use any of the Arduino or Arduino work-alikes for 
that project.  The differences between them and the UNO aren't going to 
affect that application at all.  Check out 
http://k4gvo.com/images/arduino.png.  All of my Arduino and work alikes 
and projects.

I have one of these: http://shop.moderndevice.com/products/rbbb-kit and 
one of these: http://shop.moderndevice.com/products/bbb-kit.  They both 
work fine and are priced just right.  They have all the functionality of 
the real Arduino but are in a smaller package.
