I was researching a Kiosk project a couple months back and found that
there are a 3 or 4 distros out there specifically designed to address the 
requirements you describe. I would expect you can pull the parts you
need from them more easily than building from scratch.

There are DL links to the LiveCD "PWS" (Public Web Station)  that was
created to aid Katrina survivors:

Another to look at is the Live Info CD. It boots straight into a full screen 
Firefox display pointed at a dedicated URL; no window gadgets, no close 
button, no title bar, no address bar. The disk is designed to be easily 
customized, so it might be a simple matter to lift and/or tweak their Firefox 
config for use in your setup.
