I like LVM because it allows one to quickly change layouts without having to
undo anything.   One can add to an existing LV more easily than to existing
partitions.   One also doesn't run up against partition boundaries causing
issues when a new filesystem is needed.   A new LV can be added so long as
you have space.

I got in the habit of setting up LVM even on single drives (often the
primary drive in a server) because of events where original partitioning
became an issue later in the server's life.   Also I did LVM even on top of
disks presented by SAN or NAS as we found it made migrating the PVs/LVs from
one server to another easier.    It came in quite handy when migrating
Oracle cluster environments to newer servers as I learned the hard way early
on.   We used the SAN to set RAID level but then used LVM to make the
presented LUNs PVs and laid out LVs on those.

Funny:  I first learned of LVM on HP-UX.   The concept seemed silly to me
until I got familiar with using it.   "You want me to make all my disks a
single Physical Volume (PV) then slice it up into Logical Volumes (LVs).
How does that make more sense than just partitioning in the first place.

Depends. What do you want to do?
Simply, do you want to create a single 512GB volume (Linear/JBOD), or
something more intricate like striping(raid 0) or mirroring(raid1).
Understanding there are pros and cons for each approach.
