Modular cables are handy, but I'm not sure it is worth the extra $30-$60 to me. I just use some velcro strips to bundle all the unused power cables off out of the way.
They are cheap. https://www.amazon.com/Attmu-Reusable-Fastening-Microfiber-6-Inch/dp/B00O9VKVFK/ for 50 or you can go cheaper if you have scissors and cut each to the size needed.
As for PSU sizes ... if you stay with ATX cases (mid/tower) and any ATX motherboard, then they all fit. It is when we do odd things like using an ITX or mITX MB with a funky case that size can cause issues. I had an Istar ITX steal case that came with a PSU clearly made to rival an F100 jet engine for noise. Pulled that PSU and got a 60W PicoPSU, which is completely silent. Never had any issues with the PicoPSU at all, besides the open hole where the old PSU was mounted, but that is just cosmetic. That was an AMD E-350 APU that was the media center/server for the house for years. APU+MB+case was $99.99. It just couldn't handly most hidef content.
