Hi George.
I use LaTeX, nowadays for time reason I prefer org mode in emacs and
compile from here to LaTeX. I'm not clear about what do you want to graph.
However, you can use pstricks or Tkiz. Both of them have GUI's (TikZit,
LatexDraw), so you can draw and get the code.
Beamer let you create a presentation faster that ppt if you have a
template and a little bit of experience.
