I've been a zimbra administrator for about 6 years.
Zimbra really wants to be on a dedicated server. No procmail. However, you can setup external accnts for the zimbra user to access. Fetchmai isn't needed. I love the enterprise calendar ing and setver-side rules so every client sees msgs in the same folders.
Postfix is MTA used by zimbra, so it can handle 99.95% of the needs for most businesses.
Zimbra Desktop is dead. That is a good thing. Thunderbird + lightning work well.
I've never tried outlook w/ zimbra but IMAPs is imaps, right?
