VNC is probably the best answer--replace "graphical" with "vnc" on the install boot command line. I do this all the time for VM installs. You can then connect from another machine and use the full graphical installer over vnc.

There is an option to do a serial or no head install. You might also try VNC, since the installer will be happy and it won't require a video card.
