[ale] delete all files but leave folder structure intact

For real fun use /dev/null as the backup device.   It makes the backups
extremely fast but restore is a bit problematical...

especially as ROOT:)


So it's OK to do it as root but not ROOT ?   :-)

Takes all the fun out of a Monday morning exercise of the backup/restore
