Try this:

ITunes | Preferences

Select the "General" tab.

Toward the bottom where it says "When you insert a CD...", click "import settings".

Choose "MP3 Encoder" from the dropdown.

Save/Exit out, and then when you right-click tunes, you now have the option to "Create MP3 Version"
