[ale] converting old 8mm film to dvd

So, I've got, probably 100+ old 8mm film of my Dad's I would like to 
convert.  Most of the companies I've contacted ship them off to do this. 
  I'm a bit uneasy with that.

Question is, can I do this myself?  That is, do they simply run the film 
through a projector then video tape it with a camera?  I don't see any 
other way.
