It's interesting...
I can disconnect from the 'net, and everything I've previously viewed in Mail is still there. So, as far as that goes, I think you'll still have local copies. I *do*, however, have the majority of my old email in .pst files from "back in the day". You can also export some mbox files and put them away if you're really concerned.
You could also Thunderbird a copy locally via POP (leaving messages on server) and then do a backup of that occasionally if you like, I'd suppose.
