what about ffmpeg or mencoder?  You should check out Yakety Stats (
yaketystats.org), put together by Athens own Mark Plaksin and Sam Rowe.
It's got an ajaxy interface to graphs created by Tobias Oetikers RRD tool.
I'm thinking it could work well on the iphone and be much easier than doing
a video.
