After tweaking I've got Audacity working with an external USB Sound
adapter.  I think I have two issues to solve

1.  I'm running GUI version.  Makes controlling remotely hard and uses
resources.

2.  I've not found a way to stream to a file.  It seems I have to record
a bit of audio and save it to mp3.
