Yes.  You should be able to edit your Yum conf files to point to the 5.1 repo instead of 5.0 and do a "yum -y update".  I don't have a Centos 5 system in front of me now (have to wait until I get home tonight) so I can't give you more specific instructions, but you get the idea.
