I would highly recommend  GroupWise (Truth in advertising...I work with a Novell partner).
It will run in a pure Linux environment.  It has Windows, Linux, and Mac clients.  It includes a 5 user Blackberry server license and the Nokia/Intellisync Mobile server for all other handhelds.
It will support full Outlook clients natively, and has support for imap, pop and has an excellent web client.
It even includes a document management system.
