Here's the evolution packages that I have installed on Ubuntu Edgy:

evolution
evolution-plugins
evolution-webcal
mail-notification-evolution
openoffice.org-evolution                   

Check under Edit -> Preferences -> Composer Preferences -> Spell
Checking to make sure that you've enabled a language to check (English
should be enabled by default).

Probably can't hurt to make sure that you have aspell, gnome-spell and
myspell installed to.
