[ale] gcc question

I want to compile a kernel older than my current one and am anticipating
that the latest compiler will cause problems.
How can I select which compiler is to be used by a given Makefile ?
The reason I am going down this road is that I'm getting asm
re:checksum.h errors using the latest.
