Regarding sending messages in plaintext; your message came through as
plaintext, but here's the method anyway. Open "Mail & Newsgroups"

Edit -> Mail & Newsgroups Account Settings

Choose the account you want to edit, and uncheck "Compose messages in HTML
format."
