You have to install your fonts in the Xserver, then let StarOffice know
where they are with its admin program ({HOME}/Office51/bin/spadmin). 
There are buttons at the lower right of the initial screen called "Add
Fonts" and "Edit Font Attributes."  

The first one's obvious.  The second leads to a really crucial button
called "Convert All Metric Files."  That's the one that will keep your
stuff from looking funny.
