I see you have a couple of good leads already, but here is one more.

Many of the state technical colleges offer a four part Linux admin series 
as part of various associate degrees. (Possibly as a stand alone 
certificate as well?) Chattahoochee still offers it and I believe Central 
GA did too at one time. Appalachian did not, but that did not stop me 
from taking two of the four as a transient elective. Wish I had taken all 
four...

CIS 2554, 2555, 2556 and 2557, or intro, admin, advanced admin and 
scripting are the four courses. They may still be available as on-line 
courses, though I would only recommend that for the first in the series.
