Heh. I just did that by grabbing an sshd from the play store ("SSH Server", ICE COLD APPS, basically the first free ssh server that came up when I searched for "ssh server"). Configuring it was simple, although since it's not running as superuser I can't use port 22. I could connect to the phone when using it as a personal wifi hotspot. It doesn't do sftp, but the "HTTPS / FTPS / SFTP Server" from the same group does just fine. Alas, since they're different servers they use different IDs for the same device, setting off a "MITM Attack" warning in the client you use second. I used Secureitinfo's "NetAudit" application to tell my my phone's ip address on the personal wifi network.
If you want to do it from the Mac - setup sshd + rsync on android.
You know - my linux systems connect to android over USB fine. Then the file
manager can be used ... er ... until gvfs craps out (about every 10 minutes).
